Als Pianist pflegt Moritz Ernst ein großes Repertoire von den Meistern der Wiener Klassik (J. Haydn, Mozart, Beethoven, ...) über die Romantiker - u.a. Brahms (z. B. Sonate Op.1) und Reger - hin zu einer breiten Auswahl an Werken der Moderne: Stockhausen (Klavierstück X), Eötvös (KOSMOS), Messiaen (Oiseaux exotiques) und vielen anderen (Schönberg, Webern, V. Ullmann, Bartók, etc.)

Als Cembalist hat Moritz Ernst ein Repertoire mit Werken von J. S., C. P. E. Bach, Händel und dem Fitzwilliam Virginal Book, sowie moderner Cembalomusik der Komponisten Henze, Ligeti, Poulenc, Martinu, Milhaud und anderen.
